The best thing to put on Toast besides Avocado

Easy Apple, Tahini + Thyme Toast

The easiest, throw together breakfast or snack for moms.  I know I love a good avocado toast, its creamy, salty and crunchy,  but sometimes I want something sweet but that isn't full of sugar.  This apple toast will blow your mind.

This is the first year I've been a mom, and the first year I went apple picking.  Now, don't get all excited, I didn't pack up the car and drive super far to get to an orchard, I took a few steps into my backyard and found this perfectly ripe gala apple tree.  That's right, be jealous people we have an apple tree in our backyard! I'm sure when Finn gets older, that will be a fall adventure we will enjoy put for now, I'll settle for the backyard apple picking. We eat apples all the time, and I'm so excited that I've got them at my fingertips all the time without a trip to the store.  I can easily whip up a good snack with items from my pantry paired with the apples that are growing a few steps from my kitchen!

So, let me warn you, this isn't really a recipe, but more of a step by step to one of the best breakfasts I've ever had.  I even eat this after dinner, as a dessert sometimes because its just that good.  In my opinion it's perfectly acceptable to have toast for any meal, or even as a healthy snack, especially if its loaded with satisfying, tasty and good for the soul toppings.

It's super easy to make this toast, and fast! There are a total of 5 ingredients in this recipe and most of them are ready made, so no slaving over a stove or chopping for days.  

The recipe starts with your favorite bread, and that isn't the healthiest ingredient, but I promise you it is absolutely worth the carbs.  I know bread has gotten a bad wrap these days with all the experimenting with gluten free and grain free diets, but I'm here to say, bread is back and I'm ready to enjoy it again!  And since I'm over here eating toast all the time, I try and stick to the healthier toppings.

I defintely went through a peanut butter, avocado, cream cheese stage but I've grown up a little and now I'm moving on to bigger and better ingredients these days.  These healthy toppings go beyond just delicious, they fill you up and give you the energy to last the whole day.  And we all know, us moms need all the energy we can get, am I right? #morecaffeineplease

Lets get started.  If you're feeling ambitious (which I never am) go ahead and whip up your own homemade Tahini or simply grab your favorite jar from my favorite place, Trader Joes.  For those of you who don't know about Tahini, it is sesame seed butter. Tahini is not only super silky and tasty, it's a healthier alternative to peanut butter, and research shows that sesame seeds, and thus, tahini has similar immune-boosting, cardiovascular-protective abilities to superfoods like olive oil, walnuts and flaxseeds.  I know what you're thinking, it can't be as good as peanut butter or almond butter or cashew, or whatever nut butter you've been using but don't knock it until you try it.  It's like heaven.  Not to mention that is also helps balance hormones (especially in menopausal women) .  The Immune building, paleo, vegan, gluten free sauce also has a million other uses.  Hummus, falafel, fudge, salad dressings, marinades, and just about anything.  It takes on the flavor or whatever you add too. Toast your bread and then spread it with said Tahini.  Let it melt into the bread.  

Grab your freshly picked apples from your trip to the orchard, or your backyard (no judgment here) and slice them how you like then, thick or thin.  Top the toasted, tahini filled toast with sliced apples, and then drizzle with honey and fresh thyme.  You can adjust this recipe for whatever your palette likes.  Skip the thyme, or swap the honey for maple syrup, all equally delicious.  The key to this is the bread, apples and tahini. It will be your new go to fav go-to brekky.  It's also a delicious toast for entertaining.
